BITE SIZE CAROB BABY CAKES







These little cakes are light and delicious. They are egg and dairy free. This recipe makes 24 baby cakes or 12 cupcakes or 1 large cake.

Preheat oven to 180 degrees celsius


Ingredients

1 1/2 cups unbleached all purpose flour (sifted)
3/4 cup rapadura sugar*
1/4 cup carob powder
2 tablespoons ecco*
2 teaspoons healthy baking powder (sifted)
1/4 teaspoon salt
3/4 cup soy milk or other non dairy milk
1/4 cup water
1/3 cup sunflower or light tasting oil
1 tablespoon fresh lemon juice
1 teaspoon carob molasses* or vanilla essence


Icing
1 cup carob buttons melted
crushed nuts to decorate


Method

_  Place flour, sugar, carob powder, ecco, baking powder and salt in a bowl. 
_  In a separate bowl add milk, water, oil, lemon juice and carob molasses.
_  Make a well in the center of dry ingredients and add wet ingredients, mix until combined.
Take a tablespoon of batter and place in prepared cake pans.
_  Place in preheated oven and bake for 20 minutes or until a toothpick inserted into the center of the cakes comes out clean.
_  Remove from oven and allow to cool in trays about 15 minutes. Gently remove from pans and finish cooling on a wire cake rack.
Dip cakes in melted carob and decorate with crushed nuts.


* Rapadura sugar is unrefined organic sugar available from health food stores
* Ecco is a cereal beverage naturally free of caffeine. It is made from barley and malted barley, rye and chicory. Found in the supermarket in the beverage section
* Carob molasses is a thick syrup found in some health food stores

  4. I made this as a cake for my hubby's birthday yesterday - turned out yummy! Modified icing by just whizzing soaked dates, carob powder & about 1/3 cup melted carob buttons together (no cooking) Looks like normal choc icing & tastes great! Love this site thanks so much!!
