ABC Carob Truffles

It's a rainy RAINY Sunday, and what other better way to speed up the hours than to make 'ABC Carob Truffles' with Aunty Nessy! Aunty Nessy runs to the pantry, grabs a few ingredients, passes them over to Danny and Marco and within minutes their hands are squeezing, rolling and VERY messy!!

So what went into the YUMMY truffles you ask?

Almonds, Brazil Nuts, Cashews (ABC) in equal portions
Carob Powder
Dates
Fresh Orange Juice

This is a VERY child-friendly recipe so please do not worry that their are no exact quantities for the ingredients. The basic order is as follows:

Grind up the nuts into a fine meal and then add enough carob powder so the mix is a nice dark brown colour (remember that when you add the orange juice the darkness will appear stronger). When satisfied with the colour, add thinly sliced dates to the mixture for sweetness. Add enough orange juice until all ingredients bind well and you can roll into balls. Roll balls in dessicatted coconut and place in fridge until ready to serve. These balls are VERY simple but VERY yummy!
