This dish is a simple and hearty savoury for the whole family to enjoy. It makes a large tray to serve about 8 as a main dish. Happy cooking!
Ingredients
2 cups green or french lentils, soaked for 2 hours and rinsed

1 large onion, diced
2 large cloves of garlic, crushed
2 carrots, finely chopped
1 cup frozen green peas
4 tsp salt
120g can tomato paste (I get Aldi Organic)
2 Tbs sweet paprika
2 Tbs dill weed

For the Mash
1 kg potatoes,
(1 tsp salt and about 1 cup water for boiling potatoes)
¼ cup olive oil
1 cup rice milk
1 tsp salt

Method
- Cook lentils in water until soft
- Also put potatoes on to cook in water and 1 tsp salt
While lentils are cooking...
- Fry onion in a little olive oil until soft
- Add garlic, dill weed and paprika and stir through for about 1 minute
- Add carrot and stir for a further couple of minutes
- Add frozen peas, tomato paste, salt and a little water and simmer until lentils are ready
- Add lentils and stir well. Allow to simmer while preparing mashed potato
- Mash potatoes, adding salt, olive oil and rice milk.
- Then pour lentil mix into a large baking tray.
- Scoop mashed potato on top and smooth out
- Garnish with a sprinkle of paprika and dill weed and a drizzle of olive oil
- Bake in oven at 200 degrees Celsius for about 30 minutes, until golden on top.
This dish is easiest to serve after sitting for a few minutes to cool a little.
