Pumpkin Proya (cornbread)



I REALLY enjoy making recipes where only one preparation dish is used, which equals to very little washing up. These type of recipes are fun and quick - and this is just one of the many.






Makes 12 slices

6 cups grated Pumpkin
1 1/2 cups Polenta
1 1/2 cups Plain Flour (I use Spelt)
1  Tbs 'Healthy' Baking Powder
3/4 cup Olive Oil
1 cup Milk (rice/soy)
1 Tbs Celtic Salt


  • Peel and chop up about 1/2 a medium pumpkin. Grate the pumpkin until you reach 6 cups in total. I used a food processor with a grater attachment as it is MUCH quicker.
  • Place the grated pumpkin and all other ingredients into a large bowl and mix together well.


  • Oil a lasagna dish and spoon in the pumpkin mixture. Smooth the mixture down with a spoon and place in the oven for 45 minutes or until lightly browned on the top and edges.


  • Let it cool for a few minutes then slice into 12 pieces and serve. Enjoy!
