Berry Blast Psyllium Pudding



This would have to be one of the EASIEST, HEALTHIEST and QUICKEST breakfast/dessert dishes to make, as all you need is a blender for the pudding and some chopped up fruit for on top. Can I also add that it is completely RAW!!

So get out your blenders and whip up a pudding that will be sure to please.

Blend together:
2 cups water
1 tsp celtic salt
1/2 cup honey or dates
2 Tbs vanilla
1 cup almonds
1/2 lemon (organic) with the peel
2 large handfuls of frozen berries (raspberry, blueberry or mix - my fave is raspberry)

Blend together until thin liquid. While the blender is running, add 9 tsp of psyllium husks and blend for a further 20 seconds. Pour into 6 stemmed parfait/dessert glasses or bowls. Place in the fridge for 30 minutes at a minimum or overnight for breakfast. Just before serving chop up a fruit salad to spoon on top. My favourite would have to be pawpaw, mango and blueberries - when in season.
