2 packs buckwheat pasta, cooked as packet instructions<br />
2 tins organic mixed beans, drained rinsed<br />

Pesto:<br />
1 bunch Basil, stalks removed<br />
1/2 cup walnuts<br />

3/4 cup olive oil<br />
1/4 cup lemon juice<br />

This is my absolutely fave dish at the moment - hands down!! Zip zap those winter bugs and get some groovin' green in you! !<br />

2 large bunches kale (either variety) , destalked and cut up<br />
2-3 Tbs olive oil<br />
2 large onions diced<br />
Juice of 2 lemons<br />
1-2 tsp Celtic salt<br />

Heat the oil in a fry pan (i use a wok), fry up the onion until lightly browned, add the kale, lemon juice and salt and fry up really well until it starts drying up. . Yum!!! <br />

This is sooooo easy, i promise, just give it a try, you will be forever grateful! An Easiyo maker is very useful for this recipe.<br />

<b>Ingredients</b><br />
1 litre vitasoy milky soymilk (works the best)<br />
2 Tbs of yoghurt (you can start it on full cream dairy yoghurt, I did, and then you can use your soy yoghurt for cultures from them on)<br />
<br />
Shake together the milk and yoghurt in your easiyo container until well combined, pour boiling water into your easiyo as per instructions and let your yoghurt culture for about 8 hours or overnight.<br />
<br />
Once you have set yoghurt you then pour it into a nut milk bag (or muslin cloth). Place it in a colander or hang out from a tap (that won't be turned on! ) and let it drip out all the liquid. This will take a further 6-8 hours. You now have cream cheese! !! Yummo!! You may now say THANKYOU! YOU ARE WELCOME 😀<br />

Such a beautiful flavored dish with hints of ginger, garlic, chilli and lemon... Mmmm... And it's tomato free!<br />

<b>Ingredients</b><br />
4 cm fresh young ginger<br />
3 large garlic cloves<br />
1/2 cup fresh coriander<br />
6 spring onions<br />
1 long red chilli, deseeded<br />
1 tsp turmeric powder<br />
1 litre of stock<br />
400g canned coconut milk<br />
1/4 cup lemon juice<br />
3 tsp coconut sugar<br />
2 Tbsp tamari<br />
1 1/2 cups split red lentils<br />
<br />
Blitz together together the ginger, garlic, coriander, spring onions, and chilli for about 5 seconds and then put into a sauce pan with the turmeric, stock, coconut milk, lemon juice, coconut sugar, and tamari. Let the stock simmer for 10 minutes. Add the red lentils and stir occassionally while it summers for a further 15 minutes. Enjoy over rice or by itself.<br />

Thermomix method : Blitz together together the ginger, garlic, coriander, spring onions, and chilli for about 5 seconds on speed 7. Scrape down the sides of bowl. Add the turmeric, stock, coconut milk, lemon juice, coconut sugar, and tamari and let it simmer for 10 minutes at 100°c on speed 2. Add the red lentils and let it simmer for a further 15 minutes at 100°c speed 2 reverse. Leftover rice makes fantastic rice pudding for breakfast, dessert, or any time of the day. Whipped up this morning in about 10 minutes. Yum!<br />

Ingredients<br />
500ml milk of choice (I use vitasoy as it's creamy)<br />
1/8 cup +1 loaded tsp cornflour<br />
1/3 cup honey<br />
1 tsp cinnamon<br />
1/2 tsp vanilla extract<br />
4 cups cooked brown rice<br />
<br />
Blend all the ingredients together EXCEPT the rice. Place all ingredients into a saucepan combining well and let it reach a simmer. Keep on mixing while it lightly bubbles. Its fine when it reaches a thick creamy consistency... 5-10 minutes.<br />
<br />
Eat it warm or let it set and enjoy cold.<br />

To make orange pudding mix all ingredients together in a saucepan and gently bring to a simmer, whisking continually until thick pudding consistency... OR... Use the thermomix custard setting and press start! </div>

Fry up 1 large onion in olive oil (don't be shy with the oil), add 4 large rosy red ripe tomatoes (if they are not LARGE add more) which have been chopped up. Fry the onion and tomato together with a tsp of salt until the tomato has softened and you have a chunky like sauce. Spread out in the fry pan and then crack 6 beautiful eggs on top and use a fork to spread out the yolk a bit. Sprinkle salt on top, turn down the heat and cover the fry pan with a lid to get the egg cooking through. When egg starts firming up remove the lid to dry up a little of the liquid (unless you have some sort of dry tomatoes). Sprinkle with herbs :) Enjoy!!<br />

This is one yum dish that is a spin on the 'Quirky Cooking' chicken and macadamias with coconut lime satay sauce. I replaced the chicken with tofu and it's PERFECT!!<br />

I use Eden Health Foods Power Protein and Super food powder. I've been using them for YEARS and I swear by them for so many reasons. They are RAW, based on biofermented brown rice, and they DO NOT give me a tummy ache. Every other protein powder bloats me and makes my head spin for the rest of the day. This stuff is awesome! A basic smoothie in our household is made as follows:<br />

100g almonds/walnuts/seeds and 1 L cold water blended up in a super blender until it becomes milk. I throw in a few bananas (frozen if trying to survive a heat wave), frozen mango, frozen berries, couple tablespoons protein powder, and a tablespoon of green powder. The famous <b>tofu sausage rolls</b>!! After years of not making them I made the plunge and did it! Now AGAIN it will be a regular until we over do it and it hides in the recipe book for another few years.<br />
<br />
6-7 sheets short crust pastry<br />
750g firm tofu<br />
1/4 cup soy sauce<br />
1 tsp salt<br />
1 1/2 onions<br />
2 cloves garlic<br />
1 stock cube<br />
1 1/2 cup quick oats<br />
1 Tbs savoury yeast flakes<br />
1/4 cup rice milk<br />
1 Tbs olive oil<br />
1 Tbs oregano leaf, dry<br />
1 Tbs coriander leaf, dry<br />
<br />
Process all the ingredients (except the pastry) well until all mixed together and no chunks. Cut each sheet of pastry into half, place filling across the long side, roll and then cut each log into 4. Place individual pieces onto a lined baking tray, brush with olive oil and Bake for 30 minutes or until golden brown. Let them cool a little before serving :)<br />

Blitz (pulse) it about 4-5 times until chunky but NOT mushy. Served with yogurt/pear cream and fresh fruit :)<br />

Not every dish is visually appealing and unfortunately it is those dishes that taste the BEST! This reminds us of our Fiji days and it's a family fave...mmmmm.... the taste is AMAZING! Simply YUM!<br />

<b><u>Serves 6-8</u></b><br />

<b>Splash of olive oil</b><br />
<b>2 large onions sliced into half moons</b><br />
<b>3 tsp celtic salt</b><br />
<b>1/4 cup soy sauce</b><br />
<b>2 stock cubes</b><br />
<b>400ml tin coconut cream</b><br />
<b>400ml tin coconut milk</b><br />
<b>3 cups coconut UHT milk</b><br />
<b>2 packs of firm tofu, cubed </b><br />
<b>3 large bunches of Amaranth greens sliced up, include stalk too</b><br />

Fry up the onion in the oil. Add all the ingredients EXCEPT the amaranth greens. Bring to the boil and then add the greens. Keep on pushing down with a spoon and cover with a lid. Let cook for 5-10mins until stalks soften. Serve on top of rice with a sprinkle of chili. Enjoy :)<br />

Preheat oven to 180 degrees celcius. Mix all the dry ingredients together, add the wet ingredients and mix very well. The mixture will be very wet (not able to kneed), just pour it into a lined loaf pan and bake in the oven for 40-45mins<br />

BREAKFAST - This morning we had our fave Lebanese meal 'Fool'. Equal parts of chickpeas and fava beans cooked up until soft. Drain off the liquid and add plenty of lemon juice, garlic and salt. Mash it all up and serve with HEAPS of olive oil, mint leaves, tomato, cucumber, onion, olives, sauerkraut... whatever you fancy :)<br />

The <b><u>flat bread</u></b> I make is gluten free and AMAZING. You will need 300g of buckwheat flour, 1 tsp of salt, and 400ml cold water. Mix well and then pour a little into a flat press or electric roti maker. Delish!!<br />

We make our own icecream VERY OFTEN. Todays was awesome!! In a super strong blender or food processor (I use a thermomix), blend up <u><b>FROZEN</b></u> banana, mango, raspberries, 1 Tbs tahini, 2 Tbs coconut cream, and 2 Tbs honey. Oh this is AMAZING!!<br />

Spring is here and all my fave veggies are becoming readily available... Yippee!!! This is a twist on the Lebanese Fattoush Salad which is one my faves too! </div>

<b>Serves 5</b></div>

<b><u>Ingredients:</u></b></div>
<div>
2 cups snow peas, chopped into strips</div>
<div>
2 cups celery, cut into half moons</div>
<div>
2 cups tomatoe, cut into chunks</div>
<div>
2 cups red capsicum, cubed into 1.5 cm</div>
<div>
2 shallots, cut up finely</div>
<div>
8 large leaves of cos lettuce, chopped up in strips</div>
<div>
Bunch coriander, chopped finely (or parsley if you can't handle coriander)</div>
<div>

<div>
<ul>
<li>Place all salad ingredients into a large salad bowl</li>
</ul>
<div>
<u>Dressing:</u></div>
</div>
<div>
1/4 cup olive oil</div>
<div>
1/8 cup pomegranate molasses</div>

1/8 cup lemon juice</div>
<div>
1/2 tsp salt</div>
<div>
<ul>
<li>Mix dressing ingredients together and pour over salad just before serving. Mix well.</li>
</ul>

1 tin chickpeas, drained and rinsed</div>
<div>
2 cloves crushed garlic</div>
<div>
1/4 cup lemon juice</div>
<div>
2 Tbs tahini</div>

1/2 tsp salt</div>
<div>
2 Tbs water</div>

<ul>
<li>Place all ingredients into a food processor/blender and process until smooth and creamy.</li>
</ul>

<b><u><span style="font-size: medium;">Ingredients:</span></u></b></div>

<span style="font-size: medium;">1 small Jap pumpkin (approx 1kg), peeled and cubed into 1inch chunks</span></div>

<span style="font-size: medium;">3 potatoes, peeled and cubed </span></div>
<div>
<span style="font-size: medium;">4 large kaffir lime leaves</span></div>
<div>
<span style="font-size: medium;">1 large onion, diced</span></div>
<div>
<span style="font-size: medium;">4 cloves garlic</span></div>
<div>
<span style="font-size: medium;">1 thumb size piece of ginger, grated </span></div>
<div>
<span style="font-size: medium;">2 stock cubes</span></div>
<div>
<span style="font-size: medium;">1/2 tsp salt</span></div>

<span style="font-size: medium;">1/2 tin coconut cream (or more if you like)</span></div>

<span style="font-size: medium;">Coriander, lime wedges, and Olive sourdough bread</span></div>

<li><span style="font-size: medium;">Fry up the onion, garlic, ginger, and kaffir lime leaves until onion starts softening.</span></li>
<li><span style="font-size: medium;">Add the pumpkin and potato to the onion mixture and fry together 1 more minute. </span></li>
<li><span style="font-size: medium;">Add the stock cubes then add enough water to the pot to reach just below the top of the pumpkin. You don't want the pumpkin to be covered with water, chunks should still be poking through water.</span></li>
<li><span style="font-size: medium;">Bring up the heat and let it start bubbling, then turn it down a smidge. Cook for approx 20-30 minutes or until pumpkin and potato soft.</span></li>
<li><span style="font-size: medium;">Once cooked through use a stick blender (or blender) to blend together all the ingredients. </span></li>
<li><span style="font-size: medium;">Once blended add the coconut cream.</span></li>
<li><span style="font-size: medium;">Serve with coriander, wedges of lime and some delightful sourdough bread</span></li>

Days are warming up and the garden is FULL of scrumptious greens! Time to get busy in the salad making industry... yum yum!<br />
<br />
<u><b>Ingredients:</b></u><br />
1 LARGE mixing bowl of mixed finely sliced garden greens (lettuce, kale, beetroot leaves, parsley)<br />
1 small jap pumpkin<br />
1 sweet potato<br />
2 Tbs olive oil<br />
1 onion, diced<br />
1 bunch Broccolini, cut into florets and chunks<br />
2 cups of sugar snap peas<br />
1 red capsicum sliced<br />
<i><b>OPTIONAL</b></i>: cubed, seasoned and stir fried tofu to go on top<br />
<br />
<ul>
<li>Preheat oven to 190 degrees celsius. </li>
<li>Dice the pumpkin and sweet potato into 2 cm cubes. Rub in the olive oil and place on a lined tray and bake for 25 minutes or until cooked through and browning a little. Let it cool a little.</li>
</ul>
<ul>
<li>Stir fry together the onion, broccolini, snap peas and red capsicum with a little bit of olive oil and salt until JUST starting to soften and they are BRIGHT in colour... not dull :( Remove from heat immediately and transfer into another dish,</li>
</ul>
<br />
<u><b>Dressing:</b></u><br />
2 Tbs apple cider vinger/ lemon juice<br />
1/4 cup lemon juice <br />
2 dates, pitted<br />
1/4 cup honet<br />
1/4 cup olive oil<br />
1/2 cup cashews<br />
2/3 cup coriander<br />
2 cloves garlic<br />
1 small onion<br />
1 tsp cumin powder<br />
1/2 tsp turmeric<br />
1 tsp salt<br />
1/4-1/2 cup water<br />
<ul>
<li>Blitz all the ingredients together in a high speed blender until your dressing APPEARS ;)</li>
</ul>
<u><b>TO SERVE:</b></u><br />
Layer the salad greens, stir fried vegetables, roasted vegetables and then a good pour of dressing. YUM!! OH... and the tofu too... super yummy!!<br />

<b><u>Pastry:</u></b></div>

1 kg wholemeal Spelt flour (Traditionally its done with plain white flour but you know me....)</div>

1 tsp Celtic salt</div>

1 tsp coconut sugar (or anything else you have)</div>

250 ml olive oil </div>

<li>Mix all the ingredients together for 15 minutes. If you have a bread maker or kneading machine put it into that for 15 minutes to knead. Slowly add in 500ml of lukewarm water and keep on mixing until well combined. Cover and let it rest until your spinach mixture is ready.</li>

<b><u>Spinach stuffing:</u></b></div>

1kg of fresh spinach.. or more...</div>

2 medium onions diced</div>
<div class="separator" style="clear: both; text-align: left;">
2 Tbs pine nuts</div>
<div class="separator" style="clear: both; text-align: left;">
4 Tbs Sumac (this is a middle eastern herb and MUST be put into these triangles)</div>

Juice of 2 JUICY lemons</div>
<div class="separator" style="clear: both; text-align: left;">
100ml Olive oil</div>
<ul>
<li>Wash spinach well. Cut out the stalk and finely chop into 1cm wide strips. Sprinkle with salt and rub with your hands and then let it rest for 5 minutes or more.</li>
<li>Squeeze the spinach and drain off excess water.</li>
<li>Add the onions, pine nuts, sumac, lemon juice and oil to the spinach and mix well.</li>
</ul>
<u><b>When you are ready to start making... </b></u><br />
<ul>
<li><b>Turn your oven on to 180 degrees Celsius </b></li>
</ul>
<ul>
<li>Roll out pastry 2mm thick and cut into 10-15cm rounds (use a knife to cut around a bowl of choice)</li>
<li>Place a spoonful of mixture into the middle of each circle (you will determine after trying to do a few how much to put in so its easy to close)</li>
<li>Bring up 3 edges to the middle and close shut with your fingers to form a triangular shape. You may need to use a little water.</li>
<li>Cook for 10-15 minutes until golden brown.</li>
